ISOLATION AND CHARACTERIZATION OF FUNGI CONTAMINATING PACKAGED HONEY COMMONLY CONSUMED IN SAUDI ARABIA عزل وتشخيص الفطريات الملوثة لعسل النحل المعبأ شائع الاستخدام بالمملکة العربية السعودية

Abstract

ABSTRACT :




Forty-five packaged honey samples, gathered from different retail markets in Saudi Arabia, were mycologically studied. The direct baiting-technique on 10% sucrose-Czapek’s agar at 28°C was employed. Of the 45 samples tested, 40 (88.9%) were contaminated with fungi. A total of 358 mould colonies/ 360 pieces representing 14 species related to 9 genera were isolated and identified. So it could be concluded that microbial contamination level in honey is generally low. The most prevalent moulds isolated were Aspergillus flavus, A. niger, A. fumigatus, A. versicolor. Also, other saprophytic species were isolated in rare occurrence. Some 30 colonies/ 360 pieces of unidentified species of yeasts were also isolated but in low frequently of occurrence.
يهدف هذا البحث إلى التعرف على الفطريات الملوثة لعسل النحل المعبأ وشائع الاستعمال بالمملکة العربية السعودية، تمت هذه الدراسة على 45 عينة عسل نحل جمعت عشوائياً من السوبر مارکت المختلفة بالمملکة العربية السعودية، وذلک باستخدام طريقة وضع أجزاء من العسل على سطح الوسط الغذائى 10% سکروز- تشابکس أجار والتحضين عند 28°م، وتم عزل وتعريف الفطريات الملوثة للعسل.
ومن النتائج لوحظ أن 40 عينة (88.9% من العينات المختبرة) ملوثة بالفطريات، ولکن بمستويات منخفضة جداً. وجد أن العينات 1، 5، 8، 12، 13، 15، 18، 23، 32، 34، 42 هى أکثر العينات تلوثاً بالفطريات. بينما العينات 16، 19، 26، 30، 31 خالية تماماً من الفطريات.
تم عزل وتعريف 358 مستعمرة لکل 60 قطعة من العسل تمثل 14 نوعاً تنتمى إلى 9 أجناس فطرية. وکانت أکثر الفطريات تعداداً وانتشاراً فى العينات قيد الدراسة هى أسبرجيللس أنواع فلافس، نيجر، فيوميجاتس، فيرسيکلر، أيضاً تم عزل بعض الأنواع الأخرى ولکن بترددات نادرة. أمکن أيضا عزل 30 مستعمرة لکل 360 قطعة من العسل من الخمائر غير المعرفة، ولکن بترددات منخفضة.
